Arroz Doce
(Rice Pudding)
Ingredients: 6
cups milk 1 cup white rice, uncooked 1
teaspoon salt
1 cup sugar 3 eggs, beaten 1 cup butter
1 teaspoon vanilla extract
Directions:
Bring milk to boil in heavy 3 quart
saucepan Add rice and salt, stirring until milk
returns to a boil. Cover saucepan and reduce heat;
simmer about 50 minutes. Stir in sugar.
Spoon a small amount of hot mixture into beaten
eggs, and mix well.
Add egg mixture to mixture in saucepan, stirring
constantly; cook and stir about 5 minutes longer,
and remove from heat. Stir in butter and vanilla,
blending well. Cinnamon may be added also. |
