Caribbean Remembrances: Recipes

Kuki’s Pudding

Ingredients:
4 Cups milk
1 Cinnamon Stick
1 Lemon Peel (small piece)
¼ teaspoon Salt
6 Egg Yolks
1½ cup Sugar
4 tablespoons Cornstarch
¼ cup Water
1 teaspoon Vanilla

Directions:
In a double boiler put the cold milk with the lemon peel, sugar, and cinnamon stick. In a medium glass bowl dissolve the cornstarch with the water and salt, add the egg yolk, mixing it all together with a wire whisk. Pour through the strainer, into the double boiler holding the milk. Heat at medium high heat, stirring continuously until it thickness (20 to 30 minutes). Add the vanilla. Remove the lemon peel and the cinnamon stick and pour into small serving bowls. Add powder cinnamon on top. Cool in the refrigerator and serve.
