Caribbean Remembrances: Recipes

Banana Porridge

Ingredients:
3 fingers of green bananas
1 c. milk
5 c. water
½ c. flour
½ tsp. salt
½ tsp. sugar
Nutmeg and vanilla to taste

Directions:
Wash, peel, and grate the bananas. After the bananas are grated, add the flour and salt and mix well. In the same instance, beat mixture with a fork while adding water, and beat until the mixture is smooth. Next, add nutmeg and vanilla to taste. Then, pour mixture into boiling water, stir constantly to prevent lumping, and cook until mixture thickens. Continue cooking, add milk, and then let it simmer. Cook for about 30 minutes. When done cooking just add sugar to taste.
