Caribbean Remembrances: Recipes

Banana Rum Fritters

Ingredients:
4 bananas
1oz sugar
1/3 cup rum

Batter:
3 oz plain flour
pinch of salt
1 tbsp olive oil
¼ cup of corn oil
1/3-cup warm water
2 egg whites
¼ cup white sugar

Directions:
Peel and cut bananas into ½-in thick rounds. Lay rounds in a shallow dish, sprinkle with sugar and pour rum on them. Allow to stand for 1-½ hours, turning from time to time. Prepare the batter: Sift flour and salt together. Make a well in the center and pour in the olive oil and water gradually. Mix to a smooth batter and leave to stand for one hour. Just before it is needed, lightly fold in the stiffly beaten egg whites. Drop banana round in singly, so they are completely coated. Fry in deep oil that has been heated to a faint smoke. Drain on paper towels and serve immediately sprinkled with sugar.
