Caribbean Remembrances: Recipes

Chicken Salsa w/Stuffed Cabbage (Rice Pilaf)

Ingredients:
¼ Chicken
Cabbage leaf
1 can whole kernel corn
1 cup string beans
1 cup diced sweet pepper
½ cup parsley
½ cup onions
1 tsp garlic
1 tbsp scallions
1 tsp thyme (chopped)
1 tsp black pepper
Pinch salt
1 package Sazón seasoning
1 cup mild Ortega sauce (thick & chunky salsa)
1 tsp old bay seasoning
1 tsp paprika
2 cups rice

Directions:
Season chicken w/black pepper, salt, and Sazón. Place into saucepan on top of stove and sear chicken on both sides. Turn skin side up. Bake in oven at 350º until done. Add all vegetables and rice to pan. Add thyme and butter, add water to cover rice, mix in rest of ingredients and cook on stove top until done. Place rice into raw cabbage leaf, fold over, can use toothpick to hold in place. Place into steamer for about 3 minutes. After chicken is cooked, remove from pan. Pour chicken juice into sauce pan, add Ortega sauce, simmer until it thickens.
