Caribbean Remembrances: Recipes

Cornmeal Porridge

Ingredients:
2-3 c. cornmeal
1 tsp. vanilla
1 tin evaporated milk
1 tin condensed milk
Little nutmeg
2 tbsp. Sugar

Directions:
First you have to put water into a pot. Let it boil for about 10 minutes. Then, pour the cornmeal into the boiling water, constantly stirring with a wooden spoon. Continue cooking and stirring for about 6 minutes. Then, turn your stove down about ½ gauge, and let the mixture simmer down. After that you pour and mix in the other ingredients. Then you have a perfect bowl of porridge.

Personal Passage:
This recipe became my favorite one. My mother used to make it a day ahead. We would get it in the morning before school. Not every day, but often enough to get hooked on it. So, that’s why it is my favorite.
