Caribbean Remembrances: Recipes

Alphonse Country: Belize
Ingredients: Fish (seasoned with salt and pepper) 1
can coconut milk Dash of pepper Dash of salt 4 garlic
cloves Onions
Directions:
Mix coconut milk with 1 can of water and
bring to a boil. Add onions, garlic, salt and pepper to taste. Add fish
and simmer until fish is tender. NOTE: This dish may be served over rice
cooked in coconut milk.
Personal Passage:
This dish was made all the more
special because my dad would catch the fish for the
meal.
