Caribbean Remembrances: Recipes

Mami’s Carne Ripiá (Shredded Beef)

Ingredients:
2 pounds flank steak (cooked in water + 1 basil leaf + 1 teaspoon salt in a pressure cooker for 45 minutes at medium heat)
1 medium sliced onion
5 garlic cloves (minced)
1 tsp salt
1/8 tsp black grounded pepper
1 tsp garlic salt
1 tablespoons olive oil (or less to sauté)

Directions:
Make sure meat is very tender and can easily be taken apart. Drained the water (can be saved to cooked black beans) from the meat and shred meat into thin strips. In a frying pan put the oil and sauté the onion and garlic for a minute then add the meat and cook on high heat until the meat begins to brown. Remove from stove serve with white rice, black beans and fried plantains.

Personal Passage:
Carne "ripiá" (really "ripiada" or "ripped" with a Cuban accent) over white rice reminds me of my husband, who makes it better than anyone on earth and manages to surprise me with some every now and then.
