Caribbean Remembrances: Recipes

Ingredients:
Pigs’ feet
Pigs’ ears
Salt beef
Stew beef
Oxtail
Large onions
Cassareep (fresh)*
Garlic cloves
Salt
Black pepper
Scallion
Hot pepper

Directions:
Boil feet, tail, salt beef, and oxtail until halfway cooked. Add stew beef, onion, and garlic cloves. Cook for 2 hours. Add cassarip, and cook for 2 ½ hours. Add black pepper, scallion, salt, and hot pepper. Cook to desired tenderness. Remove from heat and store in a cool place. NOTE: Always use a clean spoon to add ingredients and stir, or the pot will spoil.

*Cassareep is juice boiled from the cassava root.
