Caribbean Remembrances: Recipes

Pepperpot Soup

Ingredients:
6 stalks of callaloo
1 small head cabbage
½ lb. okra
½ lb. pig’s tail
½ lb. salt beef
½ yam
½ dasheen, sliced
1 scallion
Thyme
1 scotch bonnet pepper, seeded and sliced
Black pepper
2 qt. water
Flour dumplings

Directions:
Boil meat and vegetables together. Remove vegetables, puree, and return the pot, adding dumplings. Add sliced dasheen, thyme, scotch bonnet pepper, and scallion for seasoning. Simmer for approximately 1 hour. Add black pepper and serve.
