Caribbean Remembrances: Recipes

Pumpkin Bars Contributor: Lafayne and Andrea
Thomas Country: Jamaica
Ingredients: 4 eggs 1 2/3 c. sugar 1 c. cooking
oil 1 16 oz. can pumpkin OR 2 c. fresh-cooked pumpkin 2 c.
flour 2 tsp. baking powder 2 tsp. cinnamon 1 tsp. salt 1 tsp
baking soda
Directions: Beat together eggs, sugar, oil, and
pumpkin. Sift together flour, baking powder, cinnamon, salt, and baking
soda. Add sifted mixture to pumpkin mixture and blend. Spread batter into
an ungreased 15" x 10" x 1" pan, and bake at 350 F. for 25-30 minutes.
Cool thoroughly. Frost with cream cheese frosting.
CREAM CHEESE FROSTING Cream together 3 oz. cream
cheese and ¼ cup margarine or butter. Stir in 1 tsp. vanilla and 2 c.
confectioner’s sugar. Beat
well.
