Caribbean Remembrances: Recipes

Rice Wine

Ingredients: 1 pt. white rice 4 lbs. sugar 1
lime 1 orange ¼ oz. yeast 1 gal. water 1 lb. dried fruit 6
pieces of spice or mace
Directions: Wash rice and dry it. Put it in a jar with
dried fruit, spice or mace, sugar, and water. Stir, then sprinkle yeast on
top. Peel lime and orange, cut in half, and add. Cover jar. Allow lime to
remain for 1 week, and orange to remain for 2 weeks. At end of three
weeks, strain wine and bottle
off.
