Caribbean Remembrances: Recipes

Sofrito

Ingredients:
4 large yellow onions
4 heads of garlic
4 large green peppers
2 large red peppers
8 recao leaves
6 small sweet peppers
2 bunches of cilantro leaves
1 cup water (on standby)

Directions:
Place all ingredients in a food processor and chop coarsely. Add in the water, a small amount at a time. Pour this mixture into small tight fitting lids. Keep the sofrito in the fridge; it also freezes well. Add this mixture (to taste) to beans, dishes, stews, soups, and anything else you want to spice up.

Personal Passage:
Sofrito is the heart of Puerto Rican cuisine. Sofrito is the basis for most of our Puerto Rican dishes. Such as, the base in "Sopa de Pollo" (Chicken Soup). Try this recipe out and enjoy the wonderful flavor it gives to dishes.
