Caribbean Remembrances: Recipes

Torticas de Moron (Cookies)

Ingredients:
1 cup of flour
1 cup of sugar
¾ cup of Crisco

Directions:
Mix all the ingredients together in a bowl until you have dough. Sprinkle a table with flour and place the dough on it. Stretch the dough rapidly. Extend the dough from the center outward until it is ¾ inches high. Cut the dough with a round cookie cutter with a diameter of about 1.5 inch in diameter. Place the cookies on the cookie sheet, leaving some space between each other. Place in the middle shelf of the oven, preheated to 450º F. Bake until they are golden, then take them out of the oven and let them cool. Optional: You can put a small piece of guayaba in its center before putting them in the oven.

Personal Passage:
In our town of Moron we call these torticas, but in the United States they are called cookies. In Moron there used to be a candy store that was called La Palma, which was owned by the Gonzalez brothers and they brought to existence the traditional "Torticas de Moron" recipe, which has been published in many newspapers and magazines. Our grandmothers, mothers, and aunts used to bake these cookies on our vacation days for the children at home, for snacks and picnics. They are delicious and when they are baking the whole neighborhood can smell them.
